"The 2021 Ossian was produced with Verdejo grapes from old, organically farmed vines on sand and stony soils around the village of Nieva in the province of Segovia—Aldeanueva del Codonal, Aldehuela del Codonal, Ochando, Melque de Cercos, Nava de la Asunción, Moraleja de Coca and Santiuste de San Juan Bautista—a zone where phylloxera didn't reach. The plots were vinified separately in 300- to 600-liter oak barrels with indigenous yeasts, and the wines matured there with the lees for around nine months. It's spicy and has notes of yellow fruit, hay and straw, with moderate alcohol (13.5%); it's tasty, clean, fresh and balanced. 50,000 bottles produced.
