"This variety gives a clean mezcal with an excellent persistence. There is an intense and complex aroma, with herbal, floral, fruity, toasted notes and candy. The flavors obtain a fresher appreciation of the mint notes, fruitiness and intensity of mezcal. The notes of dried chiles, such as chili, are also perceived guajillo and a little chile pasilla. It is warm and its polyalcohols are slightly soft, with good intensity of flavors and excellent persistence."
